15 mins prepServes 4
A successful recipe for a delicious and nourishing roast chicken, seasoned with a flavorful smoked paprika and garlic butter, and roasted with onions, carrots, and potatoes, aiming for blood sugar balance and real food goodness.
1. Prepare the seasoned butter: In a small bowl, combine 1 tsp smoked paprika, 1 tsp lemon pepper, 1 tsp salt, 3 minced garlic cloves, and pepper to taste with 5 tablespoons of butter.
2. Prepare the chicken: Apply the seasoned butter all over the outside of your 3-pound chicken, trying to get as much as possible under the skin.
3. Prepare the vegetables: Place chopped onions, carrots, and potatoes in a roasting pan. Drizzle with extra olive oil and season with salt and pepper.
4. Roast the chicken: Place the buttered chicken on top of the vegetables in the roasting pan. Drizzle extra olive oil and sprinkle salt on top of the chicken.
5. Bake: Roast in an oven preheated to 350 degrees Fahrenheit (175 C) for about 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 C). A general rule of thumb for roasting is 20 minutes per pound.
6. Rest and Serve: Let the chicken rest for a few minutes before carving and serving with the roasted vegetables.
